      This was one of my last posts to old Oppositelock (RIP) and it ended on a cliffhanger - since the loaf was still in the oven when we went to press.

      Recipe
      This is a hack and slash modification of my friend Jen's Banana 🍌 🍞 Bread recipe but with apples cos I had a bunch.

      3-4 x bruised ass apples 1 chopped into small chunks and the rest blended to mush (3 bananas for the OG recipe)
      1/2 x cup white sugar
      1/2 x cup brown sugar (original version is all white sugar but brown caramelized crust is great)
      2 x eggs beaten
      1/2 cup sour cream
      1/4 cup veg oil
      1/2 teaspoon vanilla (not in the banana version but couldn't help)

      Dry:
      1 3/4 Cup flour
      1 teaspoon baking powder
      1 teaspoon baking soda
      1/2 teaspoon salt
      1/2 teaspoon cinnamon (not in the Banana version)

      Preheat to 325 degrees

      Mix wet together.
      Separately mix dry and add to wet, mix to combine.
      Pour into loaf pan, need a larger one because depending on how big your apples/bananas are, it can have more volume.
      If you just have a standard one though just fill half way then do muffins on the side with the rest of the batter.
      You can also just use muffin tins or even mini muffin tins.

      Baking:
      Loaf = 1 hour and 15 minutes
      Muffins of any size = 20 minutes

      Results
      It was good, the muffins were all eaten by the evening.
      It wasn't quite as moist as the Banana version but I think that's likely an apples v banana chemical difference
      I did stick a lot of apple puree into it which definitely made a bigger wetter batch, might only do 3 apples next time or maybe a touch more baking powder.

        Last time I made some, there was some finger pointing between wifey and me about eating 5 muffins, before we realized one (or more) of the dogs did some counter surfing.

        This looks very interesting, I had no clue you can make apple bread. Of course, with the new low carb diet, this has to be the third post of amazing carby food in what seems like seconds to me.... you bastards!
