We made our first steaks sous vide tonight.

We are very pleased with the results. I think a large credit goes to my wife's marinade. I carmelized some onions as a topper. Side of steamed broccoli and mashed potatoes.

You can use a sous vide cooker to warm film chemistry for film development, no clue what you cook with it though

@italia you’d be surprised. Sous vide then hot sear with basted butter is a very good way to do steaks.

@classicdatsundebate Yep, we did sous vide and then seared it on the cast iron. enough butter to kill a man.

@italia Interesting idea. I pasteurize my hard cider in the dishwasher. Hits about 165 degrees (f) in the sani-cycle which uses the heating element to boost your hot water temp, The whole cycle takes about 4 hours. I might have to measure the temperature over the whole cycle and if it stays hot enough for long enough I might just throw a steak in a ziplock and try it out.

I've been tempted as well. I usually buy budget marinating steaks and this is probably the best way to get them acceptably tender, then as you do; quick sear off.

@66p1800inpieces There are dishwasher recipes. Most I have seen are for fish, I don't eat red meat so I don't know about that, fish takes less time.

I got a great deal on a sous vide machine awhile ago but haven’t used it yet. I need to rectify that next week.

@dr-zoidberg I like to get an entire slab of meat from the butcher, then chop them up at home, put in ziploc baggies and freeze. It's usually $80 - $120 for the slab of meat, depending on cut, but I'll get 15 - 20 steaks out of that. Much cheaper than spending $10 - $20 each for equivalent from the grocery. This also makes it easy, take a bagged steak outta the freezer, dump some salt & pepper on it, and toss in the water.
Sous Vide is generally only for winter when it's cold outside, charcoal grille is definitely better when it's warm enough to be outdoors. Doing it one way makes me appreciate the other when switching back & forth. Your's looks delicious though.

I love being able to sous vide steaks from frozen. When I find a killer deal on NY boneless strip, I load up on steaks, indivudually season and vacuum seal them, and put in the freezer. I'll start the sous vide a couple of hours before I want to eat, and throw a steak in the water bath straight from the freezer. Comes out perfect every time after some post cook searing in cast iron.
