I put Chevy 1 ton brakes on my Dodge truck, you should have plenty of options with a Chevy.

There's no room under the hood, between the firewall and the core support.

@Rusty-Vandura Something to consider is that the '81 apparently has front disk brakes. Your's has drums right?
Can you use the old master with the new booster? -
If you want to avoid hyrdoboost, try to mock up how big a booster will fit. 6” and 7” dual diaphragms are pretty popular for underfloor mounting on hotrods. There are 8” GM boosters (‘vettes) as well. IMO you’ll want a dual diaphragm for disc/disc or disc/drum combos. You might look around a bit on hotrod forums. I’d be really surprised if the vette setup doesn’t fit there but vans can be tough in that regard.
Most of these setups are a couple hundred bucks at most but you’ll likely need a new reservoir and quite likely new lines at the reservoir, so a bit more cost there. There used(?) to be some good reservoir calculators online to match the bore sizes to the brake piston sizes too. SSBC and PST disc conversion sites might have some useful parts/info as well. Summit also sells LEED kits (no experience with them at all) but possible may have something there as well.
That said hydroboost is fine if not finicky for initial setup since you’d need to mess with belt routing or swap the crank pulley for more pulleys and fab some brackets for the pump unless you do the electric style setup.
