Chicken parm gets better when reheated
Much like pizza, I absolutely love reheating chicken parm because the cheese always gets nicely browned in the process after shoving it in the oven for 10 minutes or so. Yeah you could fry the chicken the first time around and broil the cheese to get to this result fresh. But something about leftovers is always good anyways.
Twas a good post bike ride lunch. Took the road bike out for a quick midday jaunt. Hilarious to me how different my two bikes are. Makes me very glad of my purchases though. Bike paths around here leave something to be desired considering riding on the road felt safer but such is life biking in America.

I feel like this applies to most tomato based dishes, particularly if there is pasta involved. Leftover over meatloaf and lasagna especially.
