The start of something good

Take one zucchini, one bell pepper, and one onion. Cut the zucchini into long flat strips, and the pepper and onion into big enough chunks so they won't fall through the grill. Brush or spray with oil; I use avocado oil in a spray can. Sprinkle with garlic pepper on both sides. Grill until everything is tender and just starting to blacken.
Meanwhile, lay out four mini-naans on a cookie sheet and spread a layer of pesto on them.
Once the veggies are done, chop them up and spread them on top. Sprinkle liberally with shredded mozzarella. Put them under the broiler until the cheese melts and gets bubbly. Enjoy!
