Haloom (or Haloomi) might be another interesting one to try smoking. It's quite solid, and tolerates high heat, to the point where it can almost be BBQed.

@baconsandwich there is no almost about it. It can be BBQed. Smoking it would be fine but you'd have to let it drain for a bit beforehand to remove some of the brine.
Haloumi & zucchini fritters with chilli flakes, fresh mint and lime zest & juice are a thing in our household.
