      We went to Rudy's BBQ for my birthday dinner yesterday, and I bought way too much brisket (wait, you can never have too much brisket). So that means brisket omelets this morning. Tomorrow it will be everything bagels with cream cheese and brisket. I'm really looking forward to that.

        I should really get something to eat....I haven't had breakfast or lunch yet and it's 11:19am here, lol.

            I want a brisket omelet. I haven’t mastered omelets, your choices are scrambled or over easy. Or over-forgotten-about.

            I’m having cake.

            Give me all the ‘70s Datsuns, ‘80s Toyotas, and ‘90s Hondas.

                @ttyymmnn Chose a shower over a proper breakfast due to poor time management. Running on one cup of coffee. There are regrets.

                  @smobgirl It's really not that hard. You just need the right pan.

                  • Two eggs beaten, mixed with 1 TBSP of water or milk (I use water)

                  • Pan on medium-low heat, let it get hot

                  • One pat of butter in the pan, let it melt until it stops bubbling

                  • Pour in the eggs. As they cook, gently push the edges of the egg towards the center to distribute the uncooked egg. As it begins to set, pull uncooked egg to the sides.

                  • Put filling on the half of the omelet away from the pan handle (see photo)

                  • Once you can smell the egg browning (it really does start to smell different), slide the omelet out of the pan filling-side first, then flip the other half over on top.

                  Enjoy!

                              Thank you for your endorsement. Watched the death of kinja until I fell asleep sitting at the nav station at ~2340. Woke at 0200 to see it still alive. About sunrise the kittehs were looking for breakfast so I finally made coffee. And our refuge has not burned down yet. I'm of the firm opinion that this vigil can not be sustained without intoxicants. Have I mentioned that I do not like Mondays on general experience? And I'm listening to the Thomas Covenant series BoTs which are so dark and angst filled and pitiful. Sigh.

                                      Great, only took 25 years for them to realize a second location just might work out for them!

                                      My parents are driving in today from Houston, I will be texting them hourly to remind them to bring back donuts.

                                        @ttyymmnn Welp, looks like I know what I'm trying tomorrow. No brisket in the house, but there are cheese, eggs and peppers. I'm terrible at omelets, but prior directions I've read want me to flip the whole circle mid-way? Screw that.

                                        I slept through breakfast and the ultimate demise of Oppo yesterday. 😞 I'm so sad. I held the troll fort down long into the night, though.

                                          @stef-schrader The trick to making an omelet is not flipping it in the pan, it's flipping it over on itself when you slide it out of the pan. I typed up the directions for Smobgirl in this thread.

                                              Hell yeah, this worked...except I definitely overstuffed mine, haha. I think I needed a bit more heat and/or time, too. Today was a My Head Is Confused by This Weather Day, so I smelled cooked eggs and was like, screw it, I hurt, I slept most of the day, and I'm hangry. Put it in my mouth.

                                              I covered up my oops with more green chile salsa. I had some of it inside with red cherry peppers and oaxaca cheese. It ruled.
