7 days into dry aging

Aging for about 28 days for my birthday meal. This is the other part of the ten pound prime cut I purchased. Will be completely smoking/grilling this come time.
Texas smokehouse burgers last night. Hatch chilis, Monterey and sour cream on a toasted brioche bun.
Fully cooked, that's just smoke.

@gettingoldercarguy nice are you happy with it? I was looking at getting a pellet grill a few years ago, but decided to get an inexpensive knock off the big greeen egg.
If we ever move I would like to upgrade my outdoor setup.

@bootstrap I love it. My wife thinks it's the best Christmas gift I've ever received. I can use Wi-Fi to watch/adjust temps from my phone, control grill temp based on internal temp, has a cold smoke mode, set up programs for various meats with regards to temperatures and or times.

@gettingoldercarguy Well that sent me down a rabbit hole. Going to order some and give it a try.

@vondon302 the bags are a little tricky to work with, seal off the edges and press the air out of the bag so it is up against the meat as much as possible. You may have to seal the bags twice to melt the two layers together as I did. Good luck and post up pics!
