      The fat in particular is so unbelievably flavorful. I noticed doordash had a ton of new restaurants today, one of which was a "Hong Kong style BBQ house" that sounded pretty good after a 12 hour workday with zero meals. 20201114_193150.jpg

      The brisket on the other hand was quite terrible. BBQ pork? Somewhere in the middle.

          @aestheticsinmotion duck fat is amazing to cook with. There's a restaurant near me that serves duck fat fried parmesan popcorn and it's to die for.

            I have had duck once. My wife and I were in Trouville, France, on the Normandy coast. We had dinner in the restaurant of our hotel, and they offered a special called Taste of Normandy. I don't remember everything that was on it, but the main course was duck, and it came with calvados, a traditional apple brandy from the Normandy region. We had a lot of great food on that trip, but I think that was my favorite.

              @aestheticsinmotion I love that Asian restaurants frequently have affordable duck on the menu. It's awesome in French cuisine but that tends to be spendy.

                If you love duck, try goose. Goddam that's a good bird. It's amazing that any are left alive given how good they taste.

                  @aestheticsinmotion That looks absolutely amazing! I love duck, wild duck especially. I haven't been out in a almost two years but duck hunting from a kayak is an absolute blast and then you get duck!

                  Honestly it is a pain to prep, but I don't do these things because they're easier than going to the store...

                      There is a Thai restaurant in our area that has duck noodle soup. My brother and I always get it extra spicy. The best I've had in the US.

                          That's my go to when going to BBQ stores. Roasted Duck + Roasted Pork on rice.

                          Still miss the roasted goose in Sham Tseng in Hong Kong though. Or Kam's Roast Goose is good as well.

                              In France, a magret is about the same price as a good beef steak both at the restaurant or at the supermarket.

                              Another advantage of the duck meat is that it's probably the least polluting red meat to produce, similar to chicken.

                                    @aestheticsinmotion If you get a hankering for a fancified version, Wild GInger has been doing an amazing duck dish (tea-smoked, I think?) for years & years. Hard to go wrong with duck at any Asian/Asian-influenced joint, though.

                                    And duck breast isn't hard to cook, either, just be prepared to deal with all the insanely delicious fat liquid gold. Use it to make the best roasted potatoes (or fries!) of your life.

                                      Duck is fantastic. Had a Peking duck at Morimoto's in Disney Springs a few years ago. Damned expensive but one of the best meals of my life.
