I love a good steak, but I really don't like dry aged. I had one at a fancy steakhouse and it just tasted semi-rancid to me. There is a guy in Australia and he dry ages his meat for 200+ days.

@musashi66 over aged will taste funky. At that point just slap some blue cheese and call it done.
