Ready for smoke. ***update***

Alder pellets finally came in. Pellicle formed, going back in the fridge to chill. Then cold smoking for three hours and following the rest of this guy for cook times, etc.:https://honest-food.net/how-to-smoke-salmon-recipe/
Waited to start smoking this morning so they were in the garage fridge overnight. Salmon looks even better now.
Cold smoke going for a while, then I'll power on the grill to follow the above hot smoke instructions.

I'm from BC. I love smoked salmon. It didn't even occur to me that cold smoking salmon was a thing until I visited Scotland last year! It was a bit of a surprise when I first got a smoked salmon dish there - for a moment I thought it was a fillet they had forgotten to cook. It was good but I still prefer hot-smoked.

@nowhere they both have their place. Cold smoked always for breakfast. Hot smoked for salads, dip, etc.
