The computer lives! My 1080 isn't fried!
I figured that since the same problem occurred with a different video card (blank screens, fans at full speed) the card itself wasn't at fault. After reading a few posts it seemed to be a power issue, but I have a good name-brand modular power supply. Yes, it was a power issue, but was relatively simple to solve.
The good thing about a modular power supply is that you can unplug the cables. But the bad thing about a modular power supply is that you can unplug the cables. It looks like that when I added a fan to the base of the case, next to the PS, I didn't plug in one of the PCIE cables fully. This would explain why I only had problems when gaming and not during normal use.
Great. I've been (relatively) productive for the last few weeks with the gaming rig down, just using the Mac and the workstation. Now I can get back to wasting countless hours on TDU2 and Microsoft Flight Simulator 2020. On the bright side, MS did release a couple of patches in the weeks that the computer was down, and so far that program seems to be running better than ever. I'm sure it's still ridiculously flawed, but it is better, FWIW...

Beats me. I haven't experienced any since late 2018.
